THE PRAISE OF TAGLIATELLA
« Make a paste of eggs and flour,
And reduce by mixing everything up
In a sheet of dough, but not too thin,
Same, firm and, on the clean cutting board,
Make noodles one finger wide.
Which you will boil happily
In lots of salt water, taking care
Which, as they say, remain al dente;
Because if it passes the cooking point
They become soft mush, filth,
In short, stuff to throw away.
On the other side in a shallow pan,
Place some slices of ham
Diced, mixed, lean and fat;
Then brown everything with butter.
Drain the soup and then season it
With this sauce and shape, then serve it.
This soup that honors Bologna
Said la Gorda not in vain
Caress the man where he needs him,
It gives strength to the muscles and the mind
It makes you take everything philosophically
It pleases, nourishes, consoles and so be it. »
